What is your favorite way to enjoy Clementines from Spain?
I enjoy eating Clementines from Spain fresh, grilled or seared, but there are also a lot of great ways to incorporate them into dishes. These recipes illustrate how easy it is to make delicious and healthy food with Clementines from Spain.
What do you love about food from Spain?
I love Spanish food because of the tradition behind it. Food has always held great importance in Spain. The country has a distinct awareness of food, and Spaniards are interested, passionate and engaged in what they eat. I would like for people to enter kitchens more often to learn about the foods we eat, to gain insight into how these foods are introduced into our world and understand their impact on our bodies and minds. The universe is perfect and we are designed to recognize instinctively what we need. For this reason, my cooking follows the natural flow of the seasons.
What is unique about your restaurant, Café Apamate, and the Spanish influence?
At Café Apamate, we aim to deliver a unique experience that transports diners to the coast of the Cantrabric Sea where they can enjoy the simplicity of fresh produce, seafood, aged and cured meats and cheeses. We also seamlessly merge ancestral techniques with new ones to develop flavors and textures de vanguardia, marking a new gastronomical era for all of us to enjoy.
