Kid’s Menu Get a Fresh Face:  Chicken fingers, french fries and pizza stick our kids in a menu rut, but fresh healthful foods offer an easy way out

Kids eat many of the same foods everyday that are high in fat, calories and salt. But, there are plenty of healthy snacks like Clementines from Spain that kids will love. Robin Miller, MS, a mother, cookbook author and host of the popular Food Network Show, Quick Fix Meals with Robin Miller, has specially created the following quick and healthy meal and snack time menu suggestions for you and your family.

  • Clementine Lassi
    For a fun twist on the classic Indian beverage, add lowfat yogurt, a pinch each of cinnamon and coriander, and sectioned Clementines in a blender and puree until smooth.

  • Clementine Chicken or Pork “Unfried” Rice
    Get the flavor of this favorite dish, without all the fat.  Dice leftover roasted chicken or pork and sauté in a bit of peanut or sesame oil.  Add chopped scallions, green bell pepper, minced fresh ginger and garlic, along with some sectioned Clementines.  Fold in leftover cooked rice and season with reduced-sodium soy sauce.  Garnish with fresh cilantro.
     
  • Clementine Fruit Snack or Dessert Pizza
    Kids love pizza! Here’s a fresh take on this time-honored favorite.  Roll a refrigerated pie crust out onto a baking sheet and sprinkle with a bit of granulated sugar.  Bake for 12 minutes, or until golden brown, in a 375 degree oven.  Spread fruit preserves (strawberry or raspberry) on baked crust and top with sectioned Clementines, sliced pears, strawberries and kiwi.  Brush fresh fruit with warmed apricot preserves before serving.

  • Clementine, Swiss Cheese and Ham Wrap
    This sandwich is a snap to make and welcomed surprise in your child’s lunch box.  Brush a flour tortilla with honey mustard.  Top with baked ham and Swiss cheese slices, watercress leaves and sectioned Clementines.  Roll up and serve.

  • Clemenade Slushies
    A perfect after school snack or a healthy refresher after soccer practice.  Combine thawed frozen lemonade, sectioned Clementines and ice in a blender.  Puree until smooth and serve.
